For example, State Line’s “Original Taffee Style” aquavit blends traditional ingredients with a touch of barrel-aged goodness. Awarded double gold at the San Francisco World Spirits Competition, it is distilled in a copper pot still using organic grain spirits and pure Michigan water. The result is a smooth aquavit with strong notes of caraway and star anise, balanced by a variety of holiday spices and a light barrel-aged flavor.
Another local option is Norden’s “Limited Snaps Edition” Pink Aquavit, which was infused with strawberries, rhubarb and a vapor-distillation of Damask rose petals for 45 days in a neutral corn spirit. This is a nod to the Norwegian tradition of serving aquavit with pickled sprue during the Christmas holidays.
The Nordic Food Lab at the University of Minnesota is also experimenting with aquavit. Their Gamle Ode dill aquavit uses seven whole botanicals, including caraway, dill, juniper berries and lemon verbena, all grown in Minnesota. This is a lighter aquavit that is intended to pair well with rich foods, especially at Midsummer and other Swedish celebrations. They are planning to release a seasonal version this year with botanicals like winter apple, cinnamon, orange peel and sea buckthorn.
